Growing Conditions

The grapes selected for this Cuvée Réserve come from our
highest vineyards Cepas del Plata and El Espinillo, located between 1400-1650 masl, with low temperatures and an average temperature amplitude of 16º C. These are the perfect conditions to obtain natural acidity and an elegant and complex sparkling wine.

Harvest

Manual harvest in 20kg bins, during February and March.

Winemaking

With the ambition of creating an assemblage with our best High-altitude Chardonnays, Cuvée Réserve Blanc de Blancs was born. Citrus and white fruit intense aromas merge with the delicacy granted by its long rest on carefully selected lees, achieving a wide and creamy sparkling wine.

Aging

Extended aging on lees.

Attractive golden yellow.

Everyday food: short ripening semi-hard or semi-soft cow cheeses, fresh pasta or stuffed with soft sauces and vegetable or seafood risotto.
