The grapes we select for Demi Sec come from vineyards that are located between 1000-1200 meters above sea level, El Yaima and Caicayén. We selected these terroirs since their characteristics give us a precise maturity that allows both Chardonnay and Pinot Noir to stand out.
Manual harvest in 20kg bins, during February and March.
