Nose

The nose is redolent of ripe blackberries and black cherry, mingled with soft and inviting accents of rosehip. Fragrant, yet subtle notes of black tea and cinnamon are a legacy of time spent in barrels of French oak.

Palate

Fresh and inviting, delivering an excellent balance between layers of fruit, fine tannins and a hint of acidity that conclude in a long and silky finish.

Growing Conditions

- Soil: loamy sand with horizontal bands of clay loam.
- Climate: dry and continental with great sun exposure allowing perfect ripening.

Harvest

Harvest by hand to 15-kg capacity plastic crates, from April 4-15, 2013, in six stages.
Yield: 6,400 kg/ha

Bottling

Winemaking

Hand selection of clusters, destemming, and subsequent berry sorting by hand. Gentle roll crushing. Five days cold maceration before fermentation at 7°C.
Alcohol fermentation in conical stainless steel tanks for 17-18 days, at a controlled temperature of 24-25°C. Post-fermentation maceration for 7-8 days. Racked directly to barrels. 100% natural malolactic fermentation.

Aging

18 months in medium toast level French Oak barrels (70% new, 30% used once).

Appearance

This is a rich, plush, deep red wine, so dark and opaque as to appear almost black at times.
