Vintage report: A large and fresh vintage, with absence of frost. Complete production of high quiality, in particular for the Malbec, wich attained a maturing at lower temperatures, particularly at night due to the marked thermal amplitude, allowing to preserve an intense acidity and great aromas.

Bottling

January 2016. This wine has neither been fined, filtered, nor cold stabilized.

Winemaking

Maceration: Cold maceration at 5ºC for 5 days
Alcoholic fermentation: It is carried out with native yeasts in concrete eggs. In it, daily trampling is carried out working with temperatures between 27-29 ° C for 26 days.
Malolatic fermentation: 100% spontaneous in 60% new French oak and 40% second use French oak.

Aging

18 months in new and 2nd use French oak.
