Palate

At the beginning, red fruit notes such as cherry are perceived, then coffe and vanilla notes appear from the oak. Full bodied with fruity and notes of violets, on the mouth elegant tannins. The soft notes of the wood are perceived in the long finish

Mid march to mid April, from special parcel in our single vineyard.

Bottling

12 months in bottle.

Winemaking

Micro vinification in small stainless steel vessels. It had a cold maceration of 72 hours at 8-10 ° C. A fermentation at 28 ° C. The total maceration was 20 days.

Aging

For aging, French oak barrels were used.

Pasta with meaty sauce, lamb stew. Excellent for pairing with a meaty dish.
