Winemaking

One fermentation Charmat method. After pneumatic pressing, the grape juice started fermenting in the autoclave tank, where fermentation was interrupted when 7% alcohol was reached, leaving residual sugar coming from the grapes. The horizontal tanks used allowed for better contact with yeast lees for a period of 3 months. Due to its vinification method, this sparkling wine keeps much of its fermentation aromas, combined with the varietal's delicacy. Also, its sweetness and acidity are well balanced, making it subtle, refreshing, and pleasant to drink. Fine and persistent bubble.
