It is well-defined, agile, delicate and elegant in the palate, featuring a persistent and well-defined finish.
Grapes are manually harvested in 18 to 20-kilogram boxes, followed by bunch selection and whole-bunch pressing at a pressure lower than 1 bar. The grape juice obtained is later decanted at 8°C for 24 hours. Only a fraction of it undergoes fermentation in stainless steel tanks at a controlled temperature of 16°C, whereas another part of it is fermented in French oak barrels. Partial malolactic fermentation; throughout the aging process, fine lees are kept in suspension to achieve greater unctuosity. After nine months of aging, the blend is made, smoothly filtered and bottled. Finally, it is stowed in the wine cellar for at least four months before its launch into the market.
