The grapes for this wine come from the vineyard of Javier Martini, a neighboring producer of El Cepillo, with whom we share an interest in the development of organic viticulture. Since 2010 we have been making a 100% whole bunch Tempranillo, a variety that for our region represents a traditional vision of San Carlos in previous decades.

Canopus is a biodynamic vineyard in Uco Valley Mendoza. The 10-hectare farm on calcareous soils and cool climate shapes the style of the wines, defined by the racy acidity, mouth textures and elegant energy. Located in a small appellation called El Cepillo, these 10 hectares of Malbec and Pinot Noir are scattered in patches defined by type of soil.

Winemaking is about minimal approaches respecting the character of the vineyards. Wines ferment and age in clay amphoras, concrete vats or neutral foudres.   Apart from the wines made from the vineyard, Canopus sources Tempranillo and Semillon from nearby neighbours.

Over the last 12 years Canopus farming has been a constant challenge against low temperatures. However, these weather conditions are also a key element of the character of the wines.

Gabriel Dvoskin founded Canopus in Southern Uco Valley in 2008, engaging with nature to start a farm and a vineyard grounded in cool climate, calcareous soils and alive ecosystem. These three conditions became categorical principles to begin a life-journey filled with hard work, sensitivity and precision. Gabriel didn’t have a background in wine. Initial connection with the vineyard took place in France and Italy during several harvests and short internships in late 90s and early 2000s. Over the last decade, Gabriel worked in the vineyard, the cellar and the sales of the wines from Canopus.

Alberto Dominguez has been in charge of the farm since its plantation in 2008. Trained from the beginning with organic and biodynamic practices, Alberto and his family work on the farm, both with plants and animals. He is a fundamental cog in understanding the micro-plots and the development of the farm over the years.

Camila Lapido is the front woman of Canopus covering several fronts, from collecting the botanical families of the vineyard to harvest logistics, sales and communicating the wines. Trained as a sommelier in Buenos Aires and later in biodynamic practices in Mendoza, she is responsible for the sales, communicating and marketing of all wines throughout the country. At the same time, Camila has developed her focus in biodynamic practices and launched several vineyard projects to improve life diversity and observation in Canopus farm.

Maria Hilen Pareja has a degree in agricultural engineering and over the last 6 years has specialised her work on micro-vilification and small parcel fermentations. Before joining Canopus in 2020, she worked in France, Italy, Chile, the United States and Argentina. In the cellar Hilen ensures the wines find expression and, together with Gabriel, follow the most natural path from the vineyard integrating biodynamic practices and deep observation. Methodical, focussed and vineyard-driven, Hilen also takes part in the biodynamic preparations.

A vibrant, terroir-transparent wine from two specific parcels, following several years of exploring its nuances. Malbec-based, this wine is fresh and delicate with a set of texture layers. We destemme in the vineyard by hand in small vats with a low percentage of whole cluster.

Pintom is marked by the cool climate and calcium carbonate covered stones, with some patches of sedimentary calcareous layers. Soil, climate and a meticulous organic - biodynamic farming outlines this elegant, vibrant and silky vintage. The first vintage of this wine was 2014.

A gluglu, fun and vibrant wine made with Pinot Noir. Spritzy and with a subtle texture in the mouth, the Pintom Petnat has a lively acidity and a variety of flavors and aromas that com- bine grapefruit, citrus and elderflower.. Elaborated with ances- tral method, involving a fermentation halt and bottling before the arrival of the spring .

The wine comes from a 0.3 hectare plot of Pinot Noir marked by the cold climate and its soils with caliche and sand. These conditions have always been key to the production of a grape with great character. 

It is a Malbec that expresses the conditions of a cold climate and calcareous soils, which gives to our wine a clear and solid character. The mouthfeel ranges from layers of graphite to herbal notes and fresh black fruit. The first vintage of this wine was 2014.

This wine is made with Malbec organic grapes from two vineyards, both in the same area (Canopus vineyard and Javier Martini). It has a 7% of Sauvignon Blanc providing freshness and character. This wine spent 10 months in concrete vats before bottling.

Far from a classic rosé, the Subversivo is as precise as it gets in the vineyard picking zones to pursue ele- gance and clear and diverse textures. It is Canopus earliest to harvest and vinified in three different ways. The first one as a rosé (pressing and no maceration), the second one is whole cluster, in an open oxidative container and the third one is also vinified as a rosé but with a 25% infusion from grapes coming from the Northern parcel harvested 5 days later. The wine is later blended and spends 7 months in Clayver amphora.
