Nose
Elegant and intense in nose– surprises with ripe fruit aromas and hints of spices, such as
cinammon, cocoa and vanilla given by the
wood.
Palate
In the mouth, tannins are strong and imposing, round at the end, and their presence is broad, tense and voluptuous.
Winemaking
A manual harvest is carried out in small 17-kilo
boxes. Then, grapes are carefully set on a
double selection table. After destemming,
grapes are placed in 52-hectoliter cement tanks
by gravity. Vinification starts with a cold
maceration process for 3 days, and continues
with an alcoholic fermentation with regular
pigeages to enhance extraction at
temperatures under strict controls. Finally, a
long maceration process at around 28oC allows
the wine to express its full potential.
Aging
In French oak barrels for 12 months (1/3 of the
barrels are new, 1/3 are second use, and 1/3 are
third use barrels).
