Nose

Rich and floral on the nose with aromas of violets, liquorice and dark red cherries.

Palate

Very Elegant , fruit driven but yet complex with a great structure and ripe sweet tannins .

Winemaking

Meticulous sorting is performed by hand prior to vinification in order to select the best grapes.

BLEEDING: 15 %

Cold maceration during 5 days before fermentation.

FERMENTATION:
Fermentation at controlled temperature of 26°C – 28°C.
Four pumping over per day and a long maceration period of 20 - 25 days.

Aging

60 % of the wine was aged in French oak barrels during 12 months.

Appearance

Dark red with violet shiny tones .



Food Pairing

Best served with all kind of grilled meats, duck, boeuf bourguignon and cheeses. Never forget the dark chocolate desert.
