It is a very delicate and elegant wine with a great structure and silky tannins.
When each grape variety has reached its optimum ripeness.
Double selection is performed: First selection of bunches and a second selection grape by grape.
BLEEDING: 20 %
Cold maceration during 5 days before fermentation at 10ºC -12ºC.
FERMENTATION: At controlled temperature with four pumping over per day. After fermentation follows a long maceration period of 20 days at 25ºC.
100 % of the wine was aged in French oak barrels during 16 months.
Dark red colour with intense violet tones.
