Growing Conditions

They are watered by furrows of water coming from the melting of the Andes. In addition to the purity of its waters, another important factor is the thermal amplitude between day and night, which helps the grapes to have more color and concentration of aromas, due to their thick skin. Finally, there is a constant breeze that blows from west to east that contributes to great sanitation.

A pre-fermentation maceration is carried out, which, the skins are left in contact with the must at a temperature of 0ºC to 2ºC for 2 to 3 days, with gentle daily movements. Post fermentation fermentation and maceration, with controlled temperatures ranging from 25ºC to 28ºC, with a maximum point of 30ºC, in small vessels. During the entire fermentation process, pump-overs and delestages are carried out to keep the solid and liquid phase in contact. Natural malolactic fermentation.


Aged for 14 months in first-use French oak barrels (medium toasted).
