Nose

Rich ripe raspberry, cherry with secondary aromas of smoked chipotle and eucalyptus.

Palate

Very well balanced with medium tannins and medium acidity. Cherry and strawberry fruit with a touch of oak inspired vanilla.

Harvest

Hand harvested in 16 kg bins.

Bottling

Bottled in recycled glass, 330 grams.

Winemaking

Hand sorted, destemmed, 4 day cold maceration, alcoholic fermentation in stainless steel tanks, peak fermentation temperature managed, daily punchdown, native malolactic fermentation in barrel, racked every 6 months, and unfined.

Aging

12 months in French oak: 225 liter and 500 liter barrels. 15% new.

Appearance

Bright deep ruby.
