Nose

Rich ripe raspberry, cherry with secondary aromas of smoked chipotle and eucalyptus.  

Palate

Very well balanced with medium tannins and medium acidity. Strawberry and cherry fruit are showing with oak inspired vanilla undertone.

Harvest

Hand harvested in 16 kg bins.

Bottling

Bottled in recycled glass, 330 gram bottles.

Winemaking

Hand sorted, destemmed, 4 day cold maceration, alcoholic fermentation in cement, peak fermentation temperature managed, daily pumpover, native malolactic fermentation in barrel, racked every 6 months, unfined/unclarified and not acidified.

Aging

12 months in French oak (225 and 500 liter barrels, 15% new)

Appearance

Bright deep ruby.
