Nose

Predominantly red fruits like plums and cherries, complemented by subtle notes of violets and hints of sweet spices. With slight oxygenation, aromas of vanilla and a touch of smokiness appear, reflecting its brief aging in oak.

Palate

Smooth, with round tannins and balanced acidity. Flavors of red and black fruits dominate, enhanced by a subtle note of chocolate or tobacco. Its velvety texture and medium body make it easy to drink. The medium to long finish is fresh, with pleasant lingering fruity and spicy notes.

Growing Conditions

Various altitudes and terroirs.

Harvest

Grapes are manually harvested in 18 kg boxes in the first hours of the day.

Winemaking

Once at the winery, they are stored in cooling chambers for 24 hours and then two different wine production processes are carried out in order to find different complexities in the components. Ten percent of the grapes is destemmed and transferred whole by gravity to a stainless-steel tank where fermentation with the skin will take place. The remaining 90% is softly pressed to get the juice. Debourbage is done through cold static settling at 8°C to protect every step of the process with dry ice and inert gases. Alcoholic fermentation is done in stainless-steel tanks. Fermentation temperature is between 14 and 16°C and lasts approximately 18 days.

Aging

10 months, 50% French and American oak and 50% stainless steel tanks.

Appearance
